Ingredients
  

  • 1 lb ground chicken or turkey
  • 3 cups coleslaw mix shredded cabbage/carrots
  • 1 cup shredded cucumber
  • 1/4 cup rice vinegar
  • 3 tbsp soy sauce or tamari for gluten-free
  • 2 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1/4 cup chopped peanuts
  • Fresh herbs mint, cilantro, or basil for garnish

Instructions
 

  • Cook the Chicken: In a skillet, the ground chicken is browned over medium heat until fully cooked (6–8 minutes). Sesame oil (1 tbsp) is added for extra flavor.
  • Make the Dressing: Rice vinegar, soy sauce, honey, garlic, and ginger are whisked together in a bowl. Half the dressing is tossed with the coleslaw mix and cucumber.
  • Assemble the Bowls: Cooked chicken is divided among bowls, topped with the slaw mixture. Remaining dressing is drizzled over each bowl, followed by peanuts and herbs.
