Ingredients
  

  • 12 large mushrooms
  • 1 8 oz package of softened cream cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 tablespoon Worcestershire sauce
  • 3 tablespoons chopped fresh parsley reserve 1 tablespoon for garnish
  • 1/2 cup chopped green onions both white and green parts
  • 2 cloves garlic finely chopped
  • 2 cups crab meat canned or pasteurized, picked through for shells
  • 3/4 cup fresh breadcrumbs dry breadcrumbs can be substituted
  • 1/2 cup grated fresh Parmesan cheese
  • A few dashes of Tabasco sauce
  • 1/2 teaspoon Old Bay seasoning
  • Melted butter for brushing
  • Salt and pepper to taste

Instructions
 

Step 1: Prepare the Mushrooms

  • Preheat your oven to 375°F (190°C).
  • Clean the mushrooms with a damp paper towel (do not rinse under water to avoid sogginess).
  • Remove the stems by gently twisting or cutting them out. Use a spoon to scoop out a small portion of the inside to create more room for the filling. Discard the stems or save them for another use (e.g., stock or sautéed dishes).

Step 2: Pre-Bake the Mushrooms

  • Lightly brush the mushroom caps with melted butter.
  • Place the mushrooms on a baking sheet and pre-bake them in the oven for 10 minutes. This helps prevent the filling from overcooking before the mushrooms are done.

Step 3: Prepare the Filling

  • In a large mixing bowl, combine the softened cream cheese, shredded Parmesan, Worcestershire sauce, 2 tablespoons of chopped parsley, chopped green onions, and garlic. Mix well until fully incorporated.
  • Gently fold in the crab meat, breadcrumbs, grated Parmesan, Tabasco sauce, and Old Bay seasoning. Season with salt and pepper to taste. Mix until evenly combined.

Step 4: Stuff the Mushrooms

  • Remove the pre-baked mushrooms from the oven.
  • Generously fill each mushroom cap with the crab mixture, pressing lightly to ensure they are well-stuffed.

Step 5: Bake the Stuffed Mushrooms

  • Place the stuffed mushrooms back on the baking sheet.
  • Bake at 375°F (190°C) for 15–20 minutes, or until the tops are lightly golden brown.

Step 6: Garnish and Serve

  • Remove the mushrooms from the oven and sprinkle the reserved tablespoon of fresh parsley over the top.
  • Serve warm and enjoy!
