Ingredients
  

Chicken:

  • 1 lb chicken breast tenderloins cut into bite-sized pieces

Seasoning for Chicken:

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Italian seasoning
  • For Cooking the Chicken:
  • 2 tbsp olive oil

Sauce:

  • 2 tbsp butter
  • 1/4 cup sun-dried tomatoes sliced
  • 3 garlic cloves minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese

Additional Ingredients:

  • 2 cups baby spinach chopped
  • 3 cups cheese tortellini cooked according to package instructions

Instructions
 

Prepare and Season Chicken:

  • In a small bowl, mix salt, black pepper, paprika, garlic powder, onion powder, and Italian seasoning.
  • Sprinkle the spice mix over the chicken pieces and toss until evenly coated.

Cook the Chicken:

  • Heat olive oil in a large pan over medium-high heat.
  • Add the seasoned chicken to the hot oil, spreading it into a single layer.
  • Cook for about 6 minutes, flipping halfway through, until both sides are browned and the chicken is cooked through.
  • Remove the chicken from the pan and set aside.

Make the Sauce:

  • Reduce the heat to medium and melt the butter in the same pan.
  • Add the sliced sun-dried tomatoes and minced garlic, stirring for about 30 seconds until fragrant.
  • Pour in the chicken broth, stirring to deglaze the pan and incorporate the browned bits for extra flavor.
  • Stir in the heavy cream, Italian seasoning, paprika, salt, and black pepper. Whisk until smooth.

Add Parmesan and Simmer:

  • Stir in the grated Parmesan cheese and let the sauce simmer for 1 minute, allowing the flavors to meld.

Combine and Cook:

  • Add the cooked chicken, chopped baby spinach, and cooked cheese tortellini to the sauce.
  • Gently mix everything together, ensuring the tortellini and chicken are well-coated in the sauce.
  • Cover the pan with a lid and let it cook on low heat for 5 minutes, stirring occasionally to prevent burning.
