- 1 lb fresh Roma tomatoes chopped
- 1 whole English cucumber sliced
- ½ small red onion thinly sliced
- 2 ripe avocados pitted and diced
- ¼ cup fresh cilantro chopped (or substitute with dill)
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp salt
- ½ tsp black pepper
Chop the Roma tomatoes into bite-sized pieces and transfer them to a large salad bowl.
