Ingredients
  

Crust:

  • 2 ¼ cups blanched almond flour or almond flour with skins for extra flavor
  • 2 packets stevia-Truvia erythritol with stevia extract
  • 3 tablespoons melted butter
  • Coconut spray for greasing the pan

Filling:

  • 3 bricks 8 oz each full-fat cream cheese, room temperature
  • 4 eggs room temperature
  • 18 packets stevia-Truvia equivalent to ¾ cup sugar
  • 1 tablespoon vanilla extract
  • Juice of 1 lemon
  • ¼ cup sour cream

Optional Toppings:

  • Sliced strawberries or other low-carb berries
  • Strawberry reduction strawberries cooked with stevia packets

Instructions
 

Crust:

  • Preheat the oven to 400°F (200°C).
  • Grease a springform pan or a 13x9 baking dish generously with coconut spray.
  • In a bowl, mix 2 ¼ cups almond flour, 2 packets stevia-Truvia, and 3 tablespoons melted butter until crumbly.
  • Press the mixture evenly into the bottom of the prepared pan.
  • Bake the crust for about 10 minutes, or until lightly browned. Remove from the oven and let it cool.
  • Reduce the oven temperature to 300°F (150°C).

Filling:

  • In a mixing bowl, combine 3 bricks of room-temperature cream cheese and 4 eggs. Mix until smooth.
  • Add 18 packets of stevia-Truvia, 1 tablespoon vanilla extract, the juice of 1 lemon, and ¼ cup sour cream. Mix until fully incorporated and creamy.
  • Pour the filling over the cooled crust and smooth the top with a spatula.
  • Optional: Arrange sliced strawberries or other low-carb berries on top for added flavor and presentation.

Baking:

  • Bake the cheesecake at 300°F (150°C) for about 60 minutes. Check at 45 minutes to ensure it doesn’t overbake.
  • Once baked, remove the cheesecake from the oven and let it cool completely.
  • Run a knife around the edges of the pan to loosen the cheesecake before removing the springform ring.

Serving:

  • Slice and serve chilled or at room temperature.
  • Optional: Drizzle with a strawberry reduction or top with fresh berries for extra flair.
