Ingredients
  

For the Shrimp:

  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Juice of 1 lime

For the Cilantro Lime Rice:

  • 1 cup uncooked white rice
  • 2 cups water
  • ¼ cup fresh cilantro chopped
  • Juice of 1 lime
  • ½ tsp salt

Toppings (Customizable):

  • 1 15 oz can black beans (drained and rinsed)
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 avocado sliced or diced
  • ½ cup pico de gallo
  • ¼ cup sour cream or Greek yogurt for high-protein
  • Optional: jalapeños shredded lettuce, queso fresco

Instructions
 

Marinate the Shrimp

  • In a mixing bowl, the shrimp are tossed with olive oil, chili powder, cumin, garlic powder, smoked paprika, and lime juice.
  • The mixture is set aside to marinate for 10 minutes while the rice cooks.

Cook the Cilantro Lime Rice

  • The rice is rinsed under cold water, then added to a saucepan with 2 cups of water and ½ tsp salt.
  • It is brought to a boil, covered, and simmered for 15 minutes on low heat until fluffy.
  • Once cooked, fresh cilantro and lime juice are stirred into the rice for a bright, zesty flavor.

Sauté the Shrimp

  • A large skillet is heated over medium-high heat.
  • The marinated shrimp are added in a single layer and cooked for 2-3 minutes per side until pink and slightly curled.

Assemble the Bowls

  • Base layers are created by dividing the cilantro lime rice evenly among four bowls.
  • The shrimp, black beans, corn, avocado, and pico de gallo are layered on top.
  • A dollop of sour cream or Greek yogurt is added for creaminess.
