For the Shrimp:
- 1 lb large shrimp peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Juice of 1 lime
For the Cilantro Lime Rice:
- 1 cup uncooked white rice
- 2 cups water
- ¼ cup fresh cilantro chopped
- Juice of 1 lime
- ½ tsp salt
Toppings (Customizable):
- 1 15 oz can black beans (drained and rinsed)
- 1 cup corn kernels fresh, canned, or frozen
- 1 avocado sliced or diced
- ½ cup pico de gallo
- ¼ cup sour cream or Greek yogurt for high-protein

Marinate the Shrimp
In a mixing bowl, the shrimp are tossed with olive oil, chili powder, cumin, garlic powder, smoked paprika, and lime juice.
The mixture is set aside to marinate for 10 minutes while the rice cooks.
Cook the Cilantro Lime Rice
The rice is rinsed under cold water, then added to a saucepan with 2 cups of water and ½ tsp salt.
