Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 4 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
  • 1 ½ cups fresh spinach chopped
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch mixed with 2 tbsp water

Instructions
 

  • Prepare the Crock Pot: First, drizzle olive oil at the bottom of the slow cooker to prevent sticking.
  • Layer the Chicken: Then, place the chicken breasts in a single layer inside the crock pot.
  • Make the Sauce: Next, in a mixing bowl, whisk together heavy cream, Parmesan cheese, mozzarella cheese, garlic, sun-dried tomatoes, Italian seasoning, salt, pepper, and red pepper flakes.
  • Slow Cook: Pour the sauce over the chicken, cover, and cook on low for 5-6 hours or high for 3-4 hours, until the chicken is tender and cooked through.
  • Thicken the Sauce: Thirty minutes before serving, stir in the cornstarch slurry and fresh spinach. Stir gently to incorporate.
  • Cook the Pasta: Meanwhile, prepare the fettuccine according to package instructions. Drain and set aside.
  • Shred or Slice the Chicken: At this point, use two forks to shred the chicken into bite-sized pieces or slice as desired.
  • Combine & Serve: Finally, serve the Alfredo chicken over the pasta, garnish with fresh basil or parsley, and enjoy!
