Ingredients
  

  • 1 can 15 oz of chickpeas (also known as garbanzo beans), rinsed and drained
  • 1 cup of diced cucumber
  • 1 cup of halved cherry tomatoes
  • 1/2 red onion finely chopped
  • 1 bell pepper any color, diced
  • 1/4 cup of fresh parsley chopped
  • 1/4 cup of feta cheese optional
  • 3 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions
 

  • Begin by rinsing the canned chickpeas thoroughly under cold water to remove excess sodium and any canning liquid.
  • While the chickpeas are draining, prepare your vegetables. Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and dice the bell pepper.
  • In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, cherry tomatoes, red onion, bell pepper, and chopped parsley. If you are using feta cheese, crumble it over the top of the mixture.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the dressing. Adjust the quantities to your taste if desired.
  • Pour the dressing over the salad ingredients, and gently toss everything together until evenly coated.
  • For maximum flavor, let the salad sit for about 15 minutes before serving, allowing the ingredients to marinate.
