Ingredients
  

  • 1 lb medium shrimp peeled, deveined
  • 3 cups cooked jasmine rice day-old preferred
  • 4 garlic cloves minced
  • 1 cup frozen peas & carrots thawed
  • 2 large eggs beaten
  • 3 tbsp soy sauce low-sodium
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • ½ cup green onions chopped
  • Salt & pepper to taste

Instructions
 

  • Prep ingredients: Shrimp is patted dry and seasoned with salt. Garlic is minced, and veggies are thawed.
  • Cook shrimp: A large skillet is heated with 1 tbsp vegetable oil. Shrimp is sautéed for 2 minutes per side until pink, then set aside.
  • Scramble eggs: Eggs are cooked in the same skillet, scrambled, and removed.
  • Stir-fry base: Remaining oil is added. Garlic is sautéed for 30 seconds until fragrant.
  • Combine rice & veggies: Rice is added and broken into grains. Peas, carrots, soy sauce, and oyster sauce are stirred in.
  • Final mix: Shrimp, eggs, and green onions are folded into the rice. Sesame oil is drizzled before serving.
