- 1 lb medium shrimp peeled, deveined
- 3 cups cooked jasmine rice day-old preferred
- 4 garlic cloves minced
- 1 cup frozen peas & carrots thawed
- 2 large eggs beaten
- 3 tbsp soy sauce low-sodium
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- ½ cup green onions chopped
- Salt & pepper to taste
Prep ingredients: Shrimp is patted dry and seasoned with salt. Garlic is minced, and veggies are thawed.
Cook shrimp: A large skillet is heated with 1 tbsp vegetable oil. Shrimp is sautéed for 2 minutes per side until pink, then set aside.
Scramble eggs: Eggs are cooked in the same skillet, scrambled, and removed.
Stir-fry base: Remaining oil is added. Garlic is sautéed for 30 seconds until fragrant.
Combine rice & veggies: Rice is added and broken into grains. Peas, carrots, soy sauce, and oyster sauce are stirred in.
