- 1 lb lean ground turkey 93% lean
- ½ cup low-sodium soy sauce or gluten-free tamari
- ¼ cup honey or maple syrup for vegan option
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 tsp minced garlic
- 1 tsp grated fresh ginger
- 1 tbsp cornstarch + 2 tbsp water for slurry
- 1 cup broccoli florets fresh or frozen
- 1 medium bell pepper diced (any color)
- ½ cup shredded carrots
- 2 cups cooked white or brown rice
- Sesame seeds and sliced scallions for garnish
Step 1: Rice Preparation
1 cup of uncooked rice and 2 cups of water are combined in a saucepan. The mixture is brought to a boil, then reduced to a simmer, covered, and cooked for 15–18 minutes (for white rice) or 30–35 minutes (for brown rice). The rice is removed from heat and allowed to steam, covered, for 5 minutes.
Step 2: Teriyaki Sauce Creation
A small bowl is used to whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. In a separate bowl, cornstarch and water are mixed to create a slurry. The sauce mixture is poured into a saucepan over medium heat, and the slurry is stirred in. The sauce is simmered for 2–3 minutes until thickened, then set aside.
Step 3: Turkey and Veggie Cooking
A large skillet is heated over medium heat. The ground turkey is added and cooked for 6–8 minutes, breaking it into crumbles, until no pink remains. The turkey is transferred to a plate. In the same skillet, broccoli, bell pepper, and carrots are sautéed for 4–5 minutes until tender-crisp.
