Ingredients
  

  • 2 medium-sized cucumbers preferably organic
  • 1/2 red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • Salt and pepper to taste

Instructions
 

  • Begin by washing all fresh produce thoroughly under cold water.
  • Slice the cucumbers in half lengthwise and scoop out the seeds using a spoon for a less watery salad. Then slice them into thin half-moons.
  • In a large bowl, combine the sliced cucumbers, red onion, cherry tomatoes, and fresh parsley.
  • In a small bowl, whisk together olive oil and balsamic vinegar or lemon juice. This dressing will add a zesty finish to your salad.
  • Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  • Lastly, season with salt and pepper according to your taste. If desired, sprinkle crumbled feta cheese on top.
