- 2 medium-sized cucumbers preferably organic
- 1/2 red onion thinly sliced
- 1 cup cherry tomatoes halved
- 1/4 cup fresh parsley chopped
- 1/4 cup feta cheese crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar or lemon juice
- Salt and pepper to taste
Begin by washing all fresh produce thoroughly under cold water.
Slice the cucumbers in half lengthwise and scoop out the seeds using a spoon for a less watery salad. Then slice them into thin half-moons.
In a large bowl, combine the sliced cucumbers, red onion, cherry tomatoes, and fresh parsley.
