Ingredients
  

  • 1 small pumpkin about 1kg or ~2 pounds
  • Olive oil
  • Salt and black pepper
  • 1 onion sliced
  • 3 garlic cloves diced
  • 1 tablespoon ground coriander
  • 2 cups vegetable or chicken stock adjust for desired consistency
  • Optional: cream and parsley for garnish
  • Crusty bread for serving

Instructions
 

Roast the Pumpkin

  • Preheat the oven to 200°C (400°F).
  • Remove seeds from the pumpkin (save seeds for roasting if desired).
  • Cut the pumpkin into wedges. For faster roasting, cut into smaller pieces.
  • Place the pumpkin wedges in a dish, drizzle with olive oil, and season with salt and pepper.
  • Roast in the oven for 1–2 hours, or until the pumpkin is soft and caramelized at the edges. Let cool.

Prepare the Aromatics

  • Heat a small amount of olive oil in a medium pan over medium heat.
  • Add sliced onion and cook until soft and translucent (about 10 minutes).
  • Add diced garlic and cook for another 2–3 minutes.

Scoop the Pumpkin

  • Once the roasted pumpkin has cooled, scoop out the flesh using a spoon and set aside in a bowl.

Season the Soup Base

  • Add 1 tablespoon of ground coriander to the onion and garlic mixture. Cook for 1–2 minutes until fragrant.

Combine and Blend

  • Add the roasted pumpkin to the pan.
  • Pour in 2 cups of stock, stirring to combine. For a thinner soup, add more stock as needed.
  • Transfer the mixture to a blender or use a stick blender to blend until smooth.

Serve and Garnish

  • Pour the blended soup into bowls.
  • Garnish with cream and parsley.
  • Serve hot with crusty bread.
