- 6 bone-in skin-on chicken thighs
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter divided
- 8 oz cremini or baby bella mushrooms sliced
- 4 cloves garlic minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt adjust to taste
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
- 1 tablespoon chopped fresh parsley for garnish
- 1 teaspoon lemon juice optional, for brightness
Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season with onion powder, smoked paprika, oregano, salt, and black pepper.
Sear the Chicken: Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Place the chicken skin-side down and sear for 5-7 minutes until golden brown. Flip and cook for another 3 minutes. Remove from pan and set aside.
