Ingredients
  

  • 2 large chuck roasts with good fat marbling
  • Salt and black pepper to taste
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 carrots cut into large chunks
  • 1 onion chopped
  • 3 celery stalks chopped
  • 6 cloves garlic minced
  • Olive oil for sautéing and searing
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup red wine or chicken broth as a substitute
  • 2 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar
  • 2 bay leaves
  • Fresh thyme and rosemary

Instructions
 

Prepare Meat:

  • Season the chuck roasts generously with salt, black pepper, oregano, cumin, chili powder, garlic powder, and onion powder. Pat the seasoning into the meat.

Prepare Vegetables:

  • Heat a cast iron pan over medium-high heat. Add olive oil, then sauté the carrots, onion, and celery for 5 minutes.
  • Season with salt and black pepper. Add minced garlic and cook for 30 seconds.
  • Transfer the sautéed vegetables to the slow cooker.

Sear Meat:

  • In the same pan, heat more olive oil until very hot.
  • Sear each chuck roast for 3 minutes per side until a brown crust forms. Transfer the meat to the slow cooker, placing it on top of the vegetables.

Make Sauce:

  • In the same pan, melt butter and stir in flour. Cook for 1 minute to remove the raw flour taste.
  • Add red wine and stir until thickened. Pour in chicken broth, Worcestershire sauce, tomato paste, and brown sugar. Let simmer for 1 minute.

Assemble in Slow Cooker:

  • Pour the sauce over the meat and vegetables. Top with bay leaves, fresh thyme, and rosemary.

Cook:

  • Cover and cook on low for 8–10 hours. Remove herbs before serving.

Serve:

  • Let the pot roast rest for 10–15 minutes. Skim excess oil before serving.
