Simple Creamy Shrimp Alfredo Recipe

- 3/4 lb fettuccine noodles
- Salted water for boiling pasta
- 1 lb shrimp peeled and deveined
- 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 1 tbsp oil for cooking shrimp
- 1/2 medium onion chopped
- 2 tbsp butter
- 1 garlic clove minced
- 2 cups heavy cream
- 1/3 cup Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Cook the fettuccine noodles in salted water according to the package instructions. Drain and set aside (do not rinse).
Pat the shrimp dry with paper towels. Season with salt, paprika, and black pepper. Stir to coat.
Heat 1 tbsp oil in a large pan over medium-high heat. Add shrimp in a single layer and cook for about 2 minutes per side or until cooked through. Remove shrimp from the pan.
In the same pan, melt 2 tbsp butter. Add the chopped onion and sauté for 5 minutes, or until soft and golden.
Add minced garlic to the pan and cook for 1 minute or until fragrant.
Stir in 2 cups of heavy cream and bring to a simmer. Cook for another 2 minutes.
Add 1/3 cup Parmesan cheese and stir until melted and smooth. Keep the sauce at a light simmer (do not boil). Season with salt and pepper to taste.
Add the cooked fettuccine and shrimp to the pan, tossing to coat in the sauce.
Garnish with fresh parsley and extra Parmesan cheese before serving.
