Ingredients
  

  • 3/4 lb fettuccine noodles
  • Salted water for boiling pasta
  • 1 lb shrimp peeled and deveined
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • 1 tbsp oil for cooking shrimp
  • 1/2 medium onion chopped
  • 2 tbsp butter
  • 1 garlic clove minced
  • 2 cups heavy cream
  • 1/3 cup Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook the fettuccine noodles in salted water according to the package instructions. Drain and set aside (do not rinse).
  • Pat the shrimp dry with paper towels. Season with salt, paprika, and black pepper. Stir to coat.
  • Heat 1 tbsp oil in a large pan over medium-high heat. Add shrimp in a single layer and cook for about 2 minutes per side or until cooked through. Remove shrimp from the pan.
  • In the same pan, melt 2 tbsp butter. Add the chopped onion and sauté for 5 minutes, or until soft and golden.
  • Add minced garlic to the pan and cook for 1 minute or until fragrant.
  • Stir in 2 cups of heavy cream and bring to a simmer. Cook for another 2 minutes.
  • Add 1/3 cup Parmesan cheese and stir until melted and smooth. Keep the sauce at a light simmer (do not boil). Season with salt and pepper to taste.
  • Add the cooked fettuccine and shrimp to the pan, tossing to coat in the sauce.
  • Garnish with fresh parsley and extra Parmesan cheese before serving.
